Pintxos -Spanish tapas skewers-

Ingredients

(Serves 3–4)

Tofu: 150 g (about 5 oz)
Sea salt: to taste
Cherry tomatoes: 6
Cucumber: 1
Radishes: 2
Avocado: 1/4
Lemon: 1 (for wedges and juice)
Fresh basil: to taste
Prosciutto: to taste
<Dressing>
Olive oil: to taste
Sea salt: to taste
Black pepper: to taste

Instructions

  1. Cut the tofu into bite-sized pieces, sprinkle with sea salt, wrap in paper towels, and drain for about 15 minutes.

  2. Cut 3 of the cherry tomatoes in half, eaving the remaining 3 whole.

  3. Thinly slice the cucumber and radishes.

  4. Cut the avocado into bite-sized pieces or thin slices. Slice the lemon thinly and squeeze the remaining lemon for juice.

  5. Skewer the ingredients and drizzle with your preferred dressing before serving.
