Pintxos -Spanish tapas skewers-

Ingredients
(Serves 3–4)
- Tofu: 150 g (about 5 oz)
- Sea salt: to taste
- Cherry tomatoes: 6
- Cucumber: 1
- Radishes: 2
- Avocado: 1/4
- Lemon: 1 (for wedges and juice)
- Fresh basil: to taste
- Prosciutto: to taste
- <Dressing>
- Olive oil: to taste
- Sea salt: to taste
- Black pepper: to taste
Instructions

Cut the tofu into bite-sized pieces, sprinkle with sea salt, wrap in paper towels, and drain for about 15 minutes.

Cut 3 of the cherry tomatoes in half, eaving the remaining 3 whole.

Thinly slice the cucumber and radishes.

Cut the avocado into bite-sized pieces or thin slices. Slice the lemon thinly and squeeze the remaining lemon for juice.

Skewer the ingredients and drizzle with your preferred dressing before serving.
