Fried Tofu with dashi

Ingredients
(Serves 4)
- Tofu: 600 g
- Potato starch: as needed
- Grated daikon radish: 120 g
- Oil for deep-frying: as needed
- <Seasoning>
- Dashi broth: 1 1/3 cups
- Mirin: 2 tsp(⋆)
- Soy sauce: 4 tsp
- (⋆)If mirin is not available, you can substitute it with white wine mixed with a small amount of sugar.
Instructions

Wrap the tofu in paper towels, place a weight on top, and drain for about 30 minutes.

Cut the tofu into two pieces. Pat dry, coat lightly with potato starch, and shake off any excess.

In a saucepan, combine the dashi, mirin, and soy sauce, and bring to a gentle boil.

Heat the oil to medium. Fry the tofu for 2–3 minutes, or until the surface becomes crisp.
