Fried Tofu with dashi

Ingredients

(Serves 4)

Tofu: 600 g
Potato starch: as needed
Grated daikon radish: 120 g
Oil for deep-frying: as needed
<Seasoning>
Dashi broth: 1 1/3 cups
Mirin: 2 tsp(⋆)
Soy sauce: 4 tsp
(⋆)If mirin is not available, you can substitute it with white wine mixed with a small amount of sugar.

Instructions

  1. Wrap the tofu in paper towels, place a weight on top, and drain for about 30 minutes.

  2. Cut the tofu into two pieces. Pat dry, coat lightly with potato starch, and shake off any excess.

  3. In a saucepan, combine the dashi, mirin, and soy sauce, and bring to a gentle boil.

  4. Heat the oil to medium. Fry the tofu for 2–3 minutes, or until the surface becomes crisp.
