Pad Thai

Ingredients
(Serves 2)
- Tofu: 300 g
- Rice noodles: 150 g
- Peeled shrimp: 4
- Garlic chives: 2–3 stalks, cut into 5 cm pieces
- Bean sprouts: 1 cup
- Eggs: 2
- Vegetable oil: 1 tsp
- Fish sauce: 2 tsp
- Sugar: 1 tsp
- Vinegar: 1 tsp
- <Toppings>
- ・Crushed peanuts: as desired
- ・Lime: 1–2, cut into wedges
Instructions

Cook the noodles and prepare the shrimp, tofu, chives, and peanuts.

Mix fish sauce, sugar, and vinegar to make the sauce.

Stir-fry the tofu and shrimp, then add the eggs and cook until soft-scrambled.

Add the noodles, tofu, bean sprouts, and chives, and toss with the sauce.

Serve on a plate and top with peanuts and lime wedges.
