Poke Bowl

Ingredients
(Serves 2)
- Tofu: 300 g
- Brown rice: 200 g
- Cucumber (thinly sliced): 1/2
- Carrot (thinly sliced): 1/2
- Red cabbage (shredded): Appropriate amount
- Avocado (bite-sized pieces): 1
- Bell pepper: 1/2
- ◆Marinade
- Soy sauce: 6 tbsp
- Mirin: 3 tbsp
- Sesame oil: 2 tsp
- Garlic paste: 1 tsp
- ◆Toppings
- White sesame seeds: 1 tbsp
- Coriander leaves: as needed
- Lime wedges: as needed
Instructions

Cook the brown rice.

Cut the tofu into 2 cm cubes and drain the excess water well.

In a shallow dish, combine the marinade ingredients and add the tofu. Marinate for about 30 minutes.

Cut the cucumber, cabbage, carrot, avocado, and bell pepper into bite-sized pieces.

Place the cooked brown rice in a shallow bowl. Add the drained tofu and vegetables on top, then drizzle with the marinade.

Sprinkle with white sesame seeds and garnish with cilantro leaves and lime.
