Ingredients

(Serves 2)

Tofu: 300 g
Brown rice: 200 g
Cucumber (thinly sliced): 1/2
Carrot (thinly sliced): 1/2
Red cabbage (shredded): Appropriate amount
Avocado (bite-sized pieces): 1
Bell pepper: 1/2
◆Marinade
Soy sauce: 6 tbsp
Mirin: 3 tbsp
Sesame oil: 2 tsp
Garlic paste: 1 tsp
◆Toppings
White sesame seeds: 1 tbsp
Coriander leaves: as needed
Lime wedges: as needed

Instructions

  1. Cook the brown rice.

  2. Cut the tofu into 2 cm cubes and drain the excess water well.

  3. In a shallow dish, combine the marinade ingredients and add the tofu. Marinate for about 30 minutes.

  4. Cut the cucumber, cabbage, carrot, avocado, and bell pepper into bite-sized pieces.

  5. Place the cooked brown rice in a shallow bowl. Add the drained tofu and vegetables on top, then drizzle with the marinade.

  6. Sprinkle with white sesame seeds and garnish with cilantro leaves and lime.
